Nose-to-tail breakfast bowl

A Saladino-style breakfast bowl: ground beef, liver, eggs, raw cheese, fresh berries. Five animal sources in one bowl. Covers most micronutrient bases.

Ingredients

  • 01200 g beef mince
  • 0250 g fresh beef liver, finely chopped or grated frozen (easier when frozen for 30 minutes)
  • 032 large pasture-raised eggs
  • 0430 g raw or aged cheese, cubed
  • 0580 g fresh berries
  • 061 tsp raw honey
  • 07Salt, generously
  • 08Butter for the pan

Method

In a bowl, mix the beef mince with the finely chopped or grated liver. The aim is for the liver to disappear into the mince — at this ratio, it adds nutrient density without the strong liver flavour.

Form into 2 small patties. Salt heavily on both sides.

Melt butter in a heavy pan over medium-high heat. Cook the patties for 2.5 minutes on each side. Transfer to a bowl.

In the same pan, crack the eggs into the rendered fat. Salt immediately. Cook 90 seconds for runny yolks.

In the bowl, add the eggs on top of the patties. Scatter the cheese cubes around the edges. Add the berries on one side. Drizzle the honey over the berries.

Eat by mixing bites: protein, cheese, fruit. The yolk acts as a sauce when broken.
